Paraguay’s global culinary presence has expanded with the inclusion of restaurants Táva Comedor, 1688 Restó, and Toro Restaurante in 50 Best Discovery. The prestigious platform is connected to The World’s 50 Best. The recognition places more Paraguayan restaurants on a global stage visited by international travellers, food critics, and culinary professionals.
The platform features a selection of restaurants, bars, hotels, and vineyards recommended by experts from the global hospitality industry. Unlike The World’s 50 Best rankings, 50 Best Discovery does not establish positions or award numerical scores. Instead, it highlights establishments considered worthy of discovery by travellers seeking unique gastronomic experiences. The restaurants featured on the platform cannot apply for inclusion. Restaurants are selected through recommendations and votes from members of the international expert community.
Táva Comedor: Paraguay through contemporary cuisine
Located in Asunción, Táva Comedor has gained recognition for its modern approach to Paraguayan cuisine. Led by chef and co-owner Luis Paredes, Táva Comedor’s essence lies in re-evaluating Paraguayan cuisine from a contemporary perspective, whilst respecting the traditions and flavours that form part of the national identity.
“We are very excited and proud. Táva is a young project, built with a great deal of effort and with the conviction that Paraguayan cuisine has much to show the world,” Paredes says.
The restaurant’s menu includes creations such as vori vori with smoked chicken, and arroz quesú (cheesy rice) with barbecue. Also, reinterpretations of national classics, including sopa paraguaya and chipa.
“From the beginning, we wanted to tell Paraguay’s story through food. Each dish has a connection with our ingredients, our traditions, and our culture.”
1688 Restó: Paraguay’s Italian heritage
The inclusion of 1688 Restó reflects another important aspect of Paraguay’s food culture: the influence of international traditions that have become part of the country’s identity. Located in Asunción, the restaurant focuses on Italian-inspired cuisine, handmade preparations, and family recipes. The restaurant offers dishes such as fresh pasta, lasagna, slow-cooked recipes, and wood-fired pizzas.
While other Paraguayan restaurants on the platform focus on native ingredients and ancestral flavours, 1688 Restó represents the diversity of influences that have shaped the country’s gastronomy over generations.
Toro Restaurante: The culture of the parrilla
The recent inclusion of Toro Restaurante brings another essential element of Paraguayan cuisine to the international stage: the country’s tradition of grilling. Focused on high-quality meat and the art of the parrilla, Toro celebrates one of Paraguay’s most recognisable culinary practices. The restaurant highlights the connection between fire, local products, and social gatherings, elements deeply rooted in Paraguayan culture.
The restaurant’s addition to the 50 Best Discovery showcases a different expression of national gastronomy, placing the traditional asado experience alongside contemporary culinary proposals.
50 Best Discovery: a global guide for culinary experiences
50 Best Discovery is an extension of the renowned The World’s 50 Best Restaurants, The World’s 50 Best Bars, The World’s 50 Best Hotels, and The World’s 50 Best Vineyards brands. The platform was created to help travellers discover outstanding hospitality experiences around the world. Rather than ranking establishments, it provides expert-curated recommendations and gives visibility to restaurants that represent excellence, creativity, and a strong sense of place.
For Paraguay, the growing number of restaurants included in the guide represents an opportunity to position the country as an emerging gastronomic destination and promote its ingredients, traditions, and culinary talent internationally.
