For Axel Kuster, co-owner and one of the minds behind the project, the goal was simple yet ambitious: to create the perfect prelude to a memorable evening. When the bar opened, it introduced a new concept to the city’s social circuit: a place that embodies the spirit of connection and spontaneity.
“El Lobby was born as a space for the ‘previa’, the moment where the night begins,” Kuster explains. “We wanted somewhere comfortable, filled with good energy, where people could enjoy food and drinks together before continuing their night or staying on if they preferred.”
A space built on energy and connection
From its first night of operation, El Lobby attracted attention for its easy-going atmosphere and thoughtful design. The team chose the décor, enhanced lighting and sound, and curated playlists that capture the essence of Asunción’s youthful spirit. The result is a social hub where conversation flows as naturally as the drinks.
The inspiration came from the idea of a social lobby, a term that evokes both movement and welcome. A lobby is the first place you encounter when entering somewhere new. And El Lobby wanted to capture that feeling, turning it into a place where everyone feels at ease.
A menu designed for sharing
True to its friendly spirit, El Lobby’s menu invites guests to share. Plates are designed to be passed around among friends. Sharing platters are the most popular choice, followed closely by pizzas, meatballs, and Mexican-inspired bites such as tacos. The food is uncomplicated yet satisfying, focusing on quality ingredients and a sense of abundance rather than formality.
The drinks menu carries the same philosophy. Regulars tend to order vermouth, fernet, or a cold draught beer, which Kuster describes as “essential for any proper toast.” Yet the selection also leaves room for curiosity, with rotating specials and seasonal cocktails appearing throughout the year.
Atmosphere and experience
The ambience is relaxed and inclusive, with an emphasis on comfort and spontaneity. Early in the evening, guests come for an after-office drink or a casual dinner; as the hours pass, the rhythm of the night naturally shifts. Laughter grows louder, music takes centre stage, and the space transforms into the perfect launch point for further adventures.
El Lobby opens from Wednesday to Saturday from 18:00, striking a balance between early gatherings and late-night energy. On special dates and holidays, the bar often hosts themed events, musical tributes, or extended-hour parties, ensuring there is always something new to experience.
For Kuster, what truly defines the establishment is its sense of hospitality. “Our values are simple: good vibes, friendliness, and sincerity. We want every person who walks through the door to feel they are among friends, in a place that welcomes them just as they are.”
Distinctive spaces, shared spirit
Part of El Lobby’s charm lies in its variety of settings. The venue is divided into four distinctive sectors, each with its own aesthetic and atmosphere, allowing visitors to choose the mood that suits them best.
The Pilsen Sector: inspired by the brand’s relaxed style, is perfect for larger groups seeking a lively, informal space.
The Vintage Sector: features antique décor and nostalgic touches that evoke warmth and familiarity.
The Fernet Sector: embraces a modern look, accented with details that nod to the iconic drink.
The Chandon Sector: described by Kuster as “the most glamorous corner,” offers a chic setting for toasts, birthdays, or celebrations.
Each zone has a distinct personality, yet all are united by the same easy-going spirit that defines the bar. This balance between cohesion and variety is part of what keeps regulars returning week after week.

When asked about his favourite area of the venue, Kuster admits, “Each sector has something special. I like them all.”
Events play a central role in El Lobby’s ongoing appeal. Guests can expect live cooking sessions, musical tributes, theme nights, and tasting experiences, all designed to foster interaction and fun. What makes his establishment unique? Kuster’s answer is immediate.
“Because it is the place where the night begins. El Lobby combines good food, well-made drinks, music, and distinct spaces under one roof. Once you come, you always want to return.”
Looking ahead, Kuster and his team are preparing a new signature cocktail menu that will highlight local ingredients and creative presentation. Plans also include more live-music evenings and immersive themed events, expanding the bar’s role as both a culinary and cultural space.
