Paraguayan soup ‘Vori Vori’ rated best in the world by major international publication

Paraguay is again celebrating, this time because Vori Vori, a traditional soup that embodies the essence of Guaraní cuisine, has been recognised as the best soup in the world by Taste Atlas, with a 4.8 out of 5.0 rating. To commemorate this achievement, we interviewed an expert cook who guided us step-by-step through preparing this delightful dish.

Basic ingredients

To prepare a delicious Vori Vori for four people, you will need:

– 1 chicken breast (with bone).
– 250 grams of corn flour.
– 150 grams of Paraguayan cheese.
– 1 onion.
– 1 tomato.
– 1 bell pepper.
– 2 cloves of garlic.
– A piece of pumpkin.
– Salt and oil to taste.
– Optional: Cilantro or oregano for a special touch.

Preparation

Step 1: Prepare the broth

1. Place the chicken breast in a pot with water.
2. Add the onion, tomato, bell pepper, garlic, and pumpkin.
3. Add salt to taste and let it simmer on low heat to allow the flavors to blend well.

Step 2: Prepare the Vori Vori dough

1. Mix 250 grams of corn flour with 150 grams of Paraguay cheese in a bowl.
2. Add a pinch of salt and a splash of oil.
3. Moisten the mixture with a bit of the hot chicken broth.
4. Knead until the dough is compact and consistent, enough to form small balls.

Step 3: Form the Vori Vori balls

1. Let the dough rest for 15 minutes.
2. Form small balls with the dough. With 250 grams of corn flour, you can make approximately 50 balls.

Step 4: Cook the Vori Vori

1. Remove the vegetables from the broth.
2. Add the Vori Vori balls to the broth, stirring gently to prevent sticking.
3. Cook on low heat until the balls are tender but firm.

Step 5: The final touch (optional)

1. Add fresh cilantro or oregano for extra flavor before removing the soup from the heat.
2. Let it rest for a few minutes and serve.
