Coronel Bogado, Paraguay’s chipa capital, is home to more than 30 chiperías (chipa shops), which collectively sell around 15,000 chipas (a classic traditional Paraguayan dish) per day. The city is located in the department of Itapúa, approximately 370 kilometres from Asunción. Recently, Paraguay’s National Directorate of Intellectual Property (DINAPI) awarded the Chipa of Coronel Bogado a national Geographical Indication (GI) certificate. This achievement establishes Paraguay’s second-ever GI, the first being the Honey from the Wetlands of Ñeembucú.
This GI designation establishes the traditional Paraguayan dish as an emblematic product, protecting both its name and its territorial identity. The achievement reflects DINAPI’s mission to protect intellectual property as a tool for development and for fostering a sustainable economy. The official certificate was presented to the city of Coronel Bogado by Mirta Cardenas, representative of Geographical Indications and Designations of Origin (GI/DO).
National Chipa Festival in Coronel Bogado
The GI certification ceremony took place during the 36th edition of the National Chipa Festival, one of the country’s most important cultural and gastronomic events. The celebration featured traditional dance and musical performances. As well as a guest appearance by Paraguay’s popular pop band Los Kchiporros. The event is held annually in the city of Coronel Bogado in collaboration with the city’s cultural committee and the Chipero Association (Asociación de Chiperos).

Valuing native products
This recognition represents a significant step in valuing native products such as chipa and other traditional foods across the country. Throughout Paraguay’s history, maize and cassava-centred recipes have formed the heart of its gastronomy. Acknowledging this vital part of the nation’s culture reinforces the importance of tradition.
Receiving a GI certificate was the result of the tireless efforts of Ana Karjallo, President of the Coronel Bogado Chipa, along with everyone who contributed to securing this recognition. The award emphasises the quality of the region’s businesses and products. At the same time, the recognition incentivises economic growth, tourism, and the creation of national and international markets.
