Opened in 2004 in Asunción, it remains one of the earliest gastronomic spaces in the area, and continues to reflect the spirit of the community it serves.
A family concept rooted in the neighbourhood

The idea for Indigo began with the father of Rodrigo Nogués, or “Coto”, the current owner. He saw an opportunity to create a welcoming space for residents of Las Mercedes at a time when the neighbourhood had few restaurants.
“It started with Coto’s dad,” explains Paz, the Brand Manager of Indigo. “They opened a space in the neighbourhood because it was residential, and there were no other gastronomic places.”
From its earliest days, Indigo was designed to feel familiar. Paz describes the atmosphere as “quite family-oriented” with many visitors who live, or work nearby. Groups of office colleagues often stop by, along with regulars who have made Indigo part of their routine for years.
A menu that celebrates comforting favourites
Indigo’s kitchen focuses on traditional and street-style flavours that suit every occasion. The star of the drinks menu is the house sangría, a popular choice for visitors. “The jar of sangría is the one people want the most,” Paz shares.
When it comes to food, the restaurant is known for its grilled dishes and pizzas. “The grills and the pizzas are the most wanted.” The cuisine leans toward hearty classics that pair well with a relaxed neighbourhood atmosphere.
When asked what visitors should not miss, Paz does not hesitate. “The Indigo Grill.” The grill plate captures everything the restaurant stands for: generous portions, comforting flavours, and a focus on simple food done well. The dish remains a favourite among regulars and first-time visitors alike.
Vegetarian diners are also welcome. Indigo offers several options, including vegetarian burgers, vegetarian milanesas, and plates suitable for gluten-free diets. The menu is designed to be inclusive without losing the comforting identity that defines the restaurant.

Indigo provides indoor and outdoor seating, creating a flexible setting for different moods and seasons. The interior is air-conditioned, ensuring comfort even on warmer days. The vibe remains informal, friendly, and unpretentious.

The establishment opens from 11:00 until 01:00, offering an all-day experience that ranges from weekday lunches to late-night meals.
A neighbourhood classic that continues to feel like home
For more than twenty years, Indigo Bar has stayed true to its purpose. The place remains a space where families gather, friends meet after work, and neighbours return again and again. As Paz shares, what she loves most about working there is simple. “The people I work with, the work environment is very good.”
Indigo is not just a restaurant. It is part of the rhythm of Las Mercedes, a place where good food and familiar faces create a sense of home.
