Walk down Avenida General Máximo Santos in Asunción, and the unmistakable aroma of freshly grilled meats, slow-cooked beans, and handmade tortillas drifts from an open kitchen. Follow the scent, and appetite alone becomes enough reason to step inside Chulada La Taquería.
Origins of a friendship, and a flavour
Since opening in late 2022, Chulada has quietly built a loyal following, thanks to its genuine flavours and welcoming spirit. The restaurant is born from a long-standing friendship between two Mexicans and a Paraguayan partner, united by a shared appreciation for good food and conviviality. What began as informal taco nights among friends gradually evolved into a full-scale taquería, now managed by a multicultural team of Mexicans, Paraguayans, and Colombians, all dedicated to serving authentic dishes with heart.
The name Chulada is a Mexican expression used to describe something delightful or brilliant, and it serves as a fitting title for a place that quickly becomes a local favourite in Asunción. The founders’ vision is not only to recreate the flavours of Mexican street food but also to share its spirit, something that, perhaps one day, will inspire diners in Paraguay to say with a smile: “¡Qué chulada de comida!” meaning, “What a delicious, delightful dish!”.
At the heart of Chulada’s kitchen stands Don Luis, the father of one of the Mexican founders. A man of few words but profound culinary experience, he leaves his home in Mexico City to support his son and join this new chapter in Paraguay. His presence brings not only decades of cooking expertise but also a deep sense of family, continuity, and tradition that quietly defines the essence of the restaurant.

Atmosphere and menu
Upon entering, guests are welcomed by vibrant colours and decorations that celebrate Mexican culture, from luchadormasks and charro hats to tiny milagritos, symbolic charms believed to bring good fortune. Dining at Chulada is more than a meal; it is a brief cultural journey.
The menu features a variety of traditional Mexican dishes, with particular favourites including green salsa chilaquiles and the house signature “Mix”, a selection of tacos filled with pastor, suadero, and carnitas, served with homemade salsas and fresh tortillas. The kitchen prioritises sourcing traditional ingredients, ensuring that dishes such as pastor tacos, aguas frescas (including jamaica and horchata), and the Friday-special birria remain faithful to their roots.
“For newcomers, the Mix of tacos paired with a chilled Cerveza Sol is the recommended introduction to Mexican cuisine,” says Héctor, one of the restaurant’s co-owners.
The team is mindful of dietary needs, offering vegetarian tacos and quesadillas, and ensuring all tortillas are gluten-free. A variety of tequila-based drinks complements the menu, enhancing the traditional taquiza experience.
A cultural bridge
Behind the scenes, the story is as heartening as the food. The two main Mexican founders have shared a friendship for over 15 years. Their mutual vision of bringing the spirit of Mexican street food to Paraguay took shape when a Paraguayan friend joined them as a partner, believing in the dream. Together, they have created something truly special. Chulada La Taquería offers more than a dining experience; it is a cultural bridge, bringing the rich traditions of Mexico to Paraguay with warmth, authenticity, and a touch of charm.
