The concept was the vision of Guido Paniagua, founder and commercial director of Senador, who brings over 20 years of experience in commercial development, gastronomy management, and event organisation.

“We wanted to offer a complete experience. Not just a place to eat or drink, but an environment where people feel comfortable, enjoy themselves, and want to come back,” Guido explains.  

A new kind of Gastrobar

Since opening its doors in April 2024, Senador has evolved rapidly. Nowadays, Senador is known for its balance of elegance, warmth, and vibrant energy.

“We went from being a bar with a nocturnal proposal to consolidating ourselves as a gastrobar. We are recognised for our cuisine, our themed events, and our atmosphere. Today, we have become a reference point for social gatherings, corporate events, and partnerships with both national and international brands.”

The concept responds to a growing demand in Asunción for spaces that offer more than food. Places where design, experience, and culture coexist. “People today want to feel part of something when they go out. They want a connection, a story behind what they see, eat, and hear. That is what we aim to provide at Senador.”

“We work with trusted local suppliers who have long been in the market. Our executive chef selects fresh, seasonal products, and we also collaborate with premium brands that bring quality and exclusivity to our offer.”

Among the most requested dishes are gourmet hamburgers, wood-fired pizzas, and traditional ‘parrillitas’, small barbecue-style servings ideal for sharing. The bar menu is equally impressive.

“Our signature drinks include the Negroni Senador, fernet, and fruity caipirinhas. We also have an extensive selection of beers, wines, and even cigars and habanos for those who appreciate that experience. We also like to mix food with experiences. From live shows to themed nights, everything is designed to engage the senses.”

We take care of every aspect: the lighting, the service, and the timing of the music for each hour. Even the sound levels are regulated in each area, so everyone can talk and enjoy themselves comfortably.”

Knowing that every detail, from the music to the dish served, creates a great experience. That is the best part of what I do.”

Inside, the restaurant offers air-conditioned indoor spaces, a terrace, an open-air deck, and a VIP area ideal for private celebrations or corporate meetings.

“We want everyone to enjoy the space without limitations. That is part of our commitment to quality and respect. Not only toward our guests but also toward our team and community. Each space has its own atmosphere. We wanted flexibility, a place that could be as intimate or as social as the guest wants.”
