As Axel Kuster, co-owner, explains, “Roulette was born with the idea of fusing good gastronomy with nightlife. We wanted to create something different, where the experience is not just about going out to dance or sitting down for dinner, but enjoying both worlds in the same place.”

The concept behind Roulette draws directly from the symbolism of the casino and the roulette wheel itself. The idea of unpredictability, excitement, and anticipation shapes both the atmosphere and the programme.

“The inspiration comes from the universe of the casino. From that spirit of play, chance, and emotion that the roulette represents. You never really know how the night will end, but it always promises to be fun and different.”

This philosophy defines the venue’s identity. Each night is designed to feel distinct, encouraging guests to stay, explore, and let the evening unfold organically.

“Our base concept is that every night is different. We want people to live a full experience: good music, cocktails, gastronomy, and an atmosphere that invites you to stay until the very end. It is a space where anything can happen, just like in a game of roulette.”

“Among the most popular dishes are the albondiguitas (small meatballs), the tilapia ceviche, and the sushi sandwich. They are part of a modern and different gastronomic proposal that complements the rest of the experience.”

Behind the bar, variety is key. “We offer a wide selection of cocktails and whiskies. And of course, beer is always present. It is essential to accompany the night.”

The venue is divided into two clearly defined yet complementary areas, allowing guests to move between experiences without leaving the space.

“We have two sectors. An exterior area with balconies, tables, and chairs for those who prefer something more relaxed, and an interior space that is fully enclosed, covered, and air-conditioned. Both areas work together to offer different experiences throughout the same night.”

This layout encourages fluidity, whether guests want conversation, cocktails, or time on the dance floor. What ultimately sets Roulette apart is the cohesion of its proposal. Music, gastronomy, and ambience are not treated as separate elements but as parts of a single narrative.

“The music and the overall proposal are what make us unique. We work with experienced DJs who create the perfect atmosphere for each night, fusing different styles to keep the energy alive. That balance between food, setting, and music is what turns Roulette into a complete experience.”
