According to folklore, August – marking the midpoint of the year – was a time of transition and trials for the Guarani. To prepare, they consumed caña (sugar cane liquor) infused with herbs, which quickened the blood, cleansing and renewing it for the journey forward. In 2019, the National Secretariat of Culture of Paraguay declared Carrulim an Intangible Cultural Heritage.
The essence of Carrulim
The name Carrulim is derived from its trio of core ingredients: caña (sugar cane liquor), ruda (rue), and limón (lemon). This potent concoction is prepared days in advance of August 1, allowing the ingredients to meld, and create a smoother, more harmonious flavour.
Caña Paraguaya, distilled from sugarcane honey, is a robust spirit that symbolises energy and resilience, enjoyed in times of joy and adversity alike. Ruda, a medicinal and protective herb, is revered for warding off illness and banishing bad luck. Lemon, with its zesty vibrancy, represents renewal and vitality, essential for embracing the new cycle.
Tradition calls for seven sips of Carrulim, to be taken on an empty stomach in the morning to ensure an effective cleanse, though some prefer to enjoy it as a single shot later in the evening.
